Here's where I will post all of my recipes...

Sweet Potato Bacon & Eggs
3 Slices of bacon, cut up into 1/2" pieces
1/2 Medium sweet potato
2 Eggs
Salt & Pepper

First, cut up the bacon and toss it into a non-stick skillet. As the bacon starts to cook, peel the sweet potato (reserve the other half for tomorrow's breakfast) and cut it up into small matchsticks, literally so they look like matchstick sizes. Add the sweet potato to the bacon so the sweet potato will soak up the deliciousness of the bacon. If you want to add some cinnamon, now is the time. If not, let that cook until the bacon looks like it's getting close to your desired crispness. When it looks like it's almost to your taste, break the eggs onto the top of the sweet potatoes and bacon. Now, if you like your eggs runny, then put a lid over the skillet and turn the heat to low. This will steam the top of the egg and cook it. If you want a more done egg or a scrambled eggs, just mix it all up and cook it on low while the eggs finish cooking.

Sausage links or patties also work great with this recipe. Just remember if you get raw sausage, it may take a little longer. I've used the brown and serve patties and links and they work pretty good. I'm just partial to bacon.

This recipe has approximately 330 calories and is very filling and delicious.



Easiest (Vinegar based) BBQ Sauce EVER!!
And sorry, I didn't measure it technically, but this is how I did it. As always, adjust it to your taste.

I used a small glass jar, like maybe a 4oz jar with a lid, a lid is important here.

Next, I poured apple cider vinegar into the jar, about 1/3 of the jar

This may sound weird, but next is ketchup, about another 1/3

Red Chili Pepper Flakes, add enough to your desired heat level

Salt & Pepper

I added maybe 1tsp of sugar also, just to calm the vinegar down

Put the lid back on and shake it up.

That's it!! Less than 5 minutes and it's better (in my opinion), than any store bought stuff.
