A New Year, A Fresh Start!

This week, a new year has begun. I don't necessarily make resolutions, mostly just promises to stay on track with the things that I start with each new year.  This year, I'm going public and somehow I feel like I can hold myself accountable. Who knows if anyone will even read this, but if I'm writing it down, it's working.

So far, 2013 has been pretty low key. It's been rainy and I've been a bum, catching up on my DVR shows, reorganizing after the holidays and work.  Today, however, was a HUGE day in my world. Some may say this is freakin crazy and I'm silly, but oh well this is what I get excited about!  

I went shopping at Harris Teeter. Ok, yeh, so what...well it's SUPER DOUBLE COUPON week at the Teeter!! That means they will double coupons up to $2! So, off I went to grab a few freebies and cheap things to check off of my shopping list.  I got 21 items to include Downy, K-Cups, dog treats, deodorant, chap stick and some other things. At Harris Teeter, that stuff is expensive like $103.77 expensive. After my eVic coupons, store discounts and manufacturers coupons, I spent $31.51, yep, I saved $72.26!!!  And to top the trip off, I got a notification on my phone, I sold a brand new purse on eBay that I bought for $3 after a huge clearance sale I hit, for $44.99!!! So I actually made $10.48 while I was shopping!! I would say that today has been a good day and it's still early!


Now onto some other stuff I need to post on here... I've been working (or trying to at least) my butt off and exercising and eating right, all to no avail. Finally, I think I've found my 'magic formula' for breakfast and this will be the first recipe of many that I will share. I stick to a Gluten Free diet and here lately, almost dairy free. Not only has it helped my stomach issues, but I really do feel a lot better everyday. 

This has been my breakfast of choice almost everyday.  I don't change it much, sometimes I toss in some cinnamon to give the sweet potatoes a different taste or I may use sausage patties or links in place of bacon. Anyway you choose, this is what has worked for me. I'm not a dietitian, nutritionist or doctor and I'm especially not a chef, just a self-proclaimed all around great cook! (LOL). I just experiment with recipes, tastes and what has worked for me. Try it if you want, you might like it...if not, I won't know and my feelings won't be hurt whether you do or don't or if you don't like it. 


Sweet Potato Bacon & Eggs
3 Slices of bacon, cut up into 1/2" pieces
1/2 Medium sweet potato
2 Eggs
Salt & Pepper

First, cut up the bacon and toss it into a non-stick skillet. As the bacon starts to cook, peel the sweet potato (reserve the other half for tomorrow's breakfast) and cut it up into small matchsticks, literally so they look like matchstick sizes. Add the sweet potato to the bacon so the sweet potato will soak up the deliciousness of the bacon. If you want to add some cinnamon, now is the time. If not, let that cook until the bacon looks like it's getting close to your desired crispness. When it looks like it's almost to your taste, break the eggs onto the top of the sweet potatoes and bacon. Now, if you like your eggs runny, then put a lid over the skillet and turn the heat to low. This will steam the top of the egg and cook it. If you want a more done egg or a scrambled eggs, just mix it all up and cook it on low while the eggs finish cooking. 

Sausage links or patties also work great with this recipe. Just remember if you get raw sausage, it may take a little longer.  I've used the brown and serve patties and links and they work pretty good. I'm just partial to bacon.

This recipe has approximately 330 calories and is very filling and delicious.  I would've posted a pic of today's breakfast, but honestly I forgot. I will try to post one tomorrow.
